Zucchini Eggs

Warm a little oil in the bottom of a big pan over medium heat.

Dice up about 1/4 onion and stick 'em in.

Crack in four eggs and scramble them up.

Salt and pepper.  I bought coarse-ground Kosher salt by mistake but this stuff really made all the difference.  I used coarse-ground pepper to match.  Ooh, yummy.

Slice up a small zucchini thinly and put them in.  Stir it around until it starts to change appearance then take it of the heat (and urn off the burner!).  This way they're still a little crunchy around the edges.  If you like them more crunchy, take it off sooner.  If you want them nice and mushy, leave it on for longer, or even add a little water and put a lid on the pan for a minute or two to steam them.

You can add some turkey or regular  bacon if you desire, but this is awesome alone.

This should probably feed two or three - but I ate it all myself.  :)
